Gluten-Free Pie Crust

I don't love making a lot of "whole food treat" posts but I did want to add this one to the list of options to have around when all of the holidays are in full swing.

If you can tolerate nuts alright, this crust is tasty and holds up pretty well for not having any gluten. I love that it has less than 5 ingredients and can be whipped up in just a few minutes!

My favorite pie to make with this crust is my Paleo Pumpkin Pie. I think it would also taste great with some type of chocolate cream pie... Mmmm! I'll have to see if I can bust one of those out one of these days! Enjoy!

Gluten-Free Pie Crust

Ingredients

2 cups blanched almond flour
1/4 teaspoon sea salt
2 tablespoons soft coconut oil
1 large egg

Directions

1. Put all ingredients into a stand up mixer or food processor (or mix by hand) and mix until it forms into a ball.
2. Press into a 9 in. glass pie dish.
3. Bake at 350 for 8-12 minutes with a cookie sheet on the lower over rack to catch any leaking coconut oil. If the pie you are making calls for an uncooked crust, omit step 3 and follow the pie baking time.
