Fried Cinnamon Plantains

What do I do when I get snowed in? Try out new ingredients & recipes of course! The final count was around 90 inches of snow in the last month I heard! Boston would pull its most epic winter ever now that I'm here... They were quite the storms that turned into lovely stay-cations with all the delicious food we made at home!

I'm actually not sure why I originally added plantains to my grocery list but ended up wanting some that were fried and topped with cinnamon... Mmm!

Plantains are a fun and nutritious starch to rotate in your diet. Just like bananas, green plantains are the most starchy & least sweet. Yellow is sweeter with black as the sweetest. These can be whipped up in just a few minutes & make a fun little side dish or dessert for any meal!

Fried Cinnamon Plantains

Ingredients 
1 ripe plantain (yellow or black)
1 tablespoon coconut oil

Directions
1. Melt coconut oil in a thick bottom, non-stick frying pan over medium heat.
2. Slice the plantain in 1/4 inch thick pieces.
3. Place in frying pan in a single layer. 
4. Allow to cook until golden brown (about 2 or 3 min) & then flip over. Keep a close eye on them because they'll burn quickly!
5. Remove from pan & sprinkle with cinnamon.
6. Devour with a smile on your face! :)
