Chop Salad

Happy Tuesday! It's been an eventful one here with an unsettled 16 month-old not wanting to sleep but otherwise, it was a beautiful day!

We were invited to a potluck a couple of days ago and I was asked to bring a salad. I wanted something different to take since I tend to get super boring and mundane in my salad making.

I found a "Cobb" Salad recipe on Mark's Daily Apple that I used as a reference and switched things up as I felt like it and according to the ingredients I had at home (feel free to do the same) :) It ended up super packed with flavor and really, really delicious! I had a number of compliments on it at the potluck so I think it was a hit! Enjoy!

Chop Salad

Ingredients
3 hard-boiled eggs, peeled
4 bacon slices, cooked
1 head romaine lettuce, chopped into bite-size pieces
4 cups diced cooked turkey or chicken (leftovers work great if you have them, I didn't and just used Applegate Turkey)
1 avocado, pitted, peeled and diced
1 tomato, chopped
1/4 cup of feta cheese

Dressing:
1/4 cup Apple Cider Vinegar
1 teaspoon Coconut Aminos
1/2 teaspoon Dijon mustard
1 clove garlic (about 1 tsp), peeled and minced
1/3 cup olive oil
Salt and pepper to taste

Directions
1. Arrange lettuce in the bottom of a plate or shallow bowl and arrange the rest of the ingredients on top, or simply throw them all in (that's more of my style).
2. For the dressing, whisk all the ingredients together except the olive oil. Once combined, drizzle in the olive oil to form a thick dressing.
3. Add to salad and serve immediately.
