I had a bunch of big, delicious blueberries from Costco that I was able to put to good use. It also worked out really well for me that I had everything I needed for it already at home (with a couple minor alterations as you'll see below). I also made 1/4 of the recipe since I didn't think just two of us would need to eat 2 cups of dressing this week.
I love how fast, light, and delicious this dressing is! I'm super glad there's extra left over so I can enjoy it more this week!
Blueberry Balsamic Vinaigrette
Ingredients
8 oz. frozen organic blueberries, thawed (I used fresh berries)
1 shallot, rough chop (I used sweet onion)
1 tsp. salt, to taste
1/2 tsp. pepper, to taste
1/4 cup dijon mustard
1/2 cup good quality balsamic vinegar
1 tbsp. dried basil or tarragon, to taste
1/2 cup extra virgin olive oil

Directions
1. Put all ingredients except the oil into a blender.

3. Taste and adjust seasonings.

How has the challenge to practice faith gone this week? I've been able to catch up on some things I've been meaning to do and have really enjoyed it. A little more attention to spiritual things definitely makes me a better person :)
