Almond Butter Bars

Happy Friday! It's been so crazy around here; I'm glad it's finally weekend! 

I imagine it will be pretty low-key at home over the weekend since it's just going to be me, the little guy, and these delicious Almond Butter Bars... Hopefully we can fit in a family bike ride at some point.

So here it is, a quick little delicious treat to enjoy with those you love! I had to freeze them in pairs in little ziplock bags to keep myself from eating them all. I guess that's what you've got to do with a girl suffering some pregnancy insomnia. ;0)

Almond Butter Bars

Ingredients
1/2 cup almond butter (use organic peanut butter if tree nut allergy)
1/3 cup clarified butter or coconut oil
1 1/4 cup blanched almond flour (use coconut flour if tree nut allergy)
3/4 cup organic coconut sugar
1-2 tablespoons coconut flour (if needed)
1 1/2 cup dark chocolate chips (or make your own "raw" chocolate like I did)
2 tablespoons almond butter (to melt into chocolate)

Directions
1. In a medium bowl, stir together the almond butter, butter/coconut oil, almond flour, and sugar until it is completely combined. If the mixture is still too sticky, add one tablespoon of coconut flour at a time until mixture holds its form.

2. Press the mixture evenly into a 8 or 9-inch square baking dish lined with parchment paper.

3. In a microwave-safe bowl, add the chocolate chips and 2 tablespoons of almond butter. Melt in the microwave for 10-20 seconds, stir and repeat until the chips are completely melted. Pour the melted chocolate over the almond butter base and spread it into a thin layer. Refrigerate for at least 1 hour before serving.

3. Cut into bars and serve chilled.
