Paleo Double Chocolate Muffins

I decided to fully enjoy the day off yesterday for my birthday by taking it easy most of the day and then playing some volleyball! We won both matches last night, so we're off to a great start in the tournament! Volleyball is by far my favorite way to get in play & exercise. This is the last city league "season" until the fall, so I will certainly miss playing consistently this summer. I'm so grateful to be playing in it right now though :)

I had a request for more muffin recipes, so here is another that is sure to be a win with the kids! My 11-month old devoured his tonight. I wish I had taken a picture of it because he was absolutely covered in chocolate goodness!

I have listed some options for those who can't eat almonds or want to omit the banana. Make them however you want! Be sure to leave a comment and let me know how they turned out!


Paleo Double Chocolate Muffins

Ingredients
3 eggs
½ cup almond flour (or 1/2 cup coconut flour if unable to eat almonds)
1 tsp baking powder
3 tbsp honey (use 4 tbsp if banana is omitted)
3 tbsp almond butter (can use organic peanut butter if unable to eat almonds)
3 tbsp cacao powder
1 ripe banana, mashed (can be omitted)
¼ cup dark (85%) organic chocolate - I used Green & Black's (can be omitted, but then they no longer double chocolate muffins...)

Directions
1. Preheat oven to 425.
2. Put all the ingredients in a mixing bowl and mix until smooth.
3. Line muffin pan with 8 muffin parchment liners and fill with approximately 1/4 cup of the mixture.
4. Bake for 15 minutes until cooked all the way through.
