Irresistible Coconut Milk Whipped Cream

To go along with this week's challenge, I wanted to share the lovely fruit for dessert we had with our dinner last night! It was so fresh & "clean" tasting. I think you'll love it, especially if you're into greek yogurt with berries!

The coconut milk whipped cream is so savory, light & delicious on top of, or layered with fresh berries. There is just something about organic berries too, they taste amazing! Seriously, buy a small package of organic & non-organic strawberries & do the taste test for yourself; you'll be surprised I think!

This easy "treat" is a great way to keep it simple but spice things up at the same time! Some times I sprinkle a little cinnamon on top of the cream for fun too!
Coconut Milk Whipped Cream

Ingredients
One 15-ounce can of full-fat coconut milk
A handful of berries of choice

Directions
1. Put the can of coconut milk in the refrigerator for several hours (or overnight).
2. Open the chilled can of coconut milk and scrape off the solid top layer of creamy coconut. Do not include any of the liquid in the bottom of the can. The left-over liquid can be used for a smoothie later.
3. Whip the coconut cream with an electric mixer until it has the airy texture of whipped cream, about five minutes.
4. Layer the whipped cream in a glass with berries.

So easy, and so delicious! When you're in the mood for chocolate, you can also make a chocolate mousse, by mixing 4 ounces of melted dark chocolate into the cream once it's light and fluffy. Refrigerating it will give it a thicker texture (if desired).
