The mashed cauliflower is a great substitute for potatoes, especially when trying to reduce the starches and add in more vegetables. They are really tasty in my Shepherd's Pie recipe as well and most people didn't know that it wasn't potatoes while eating it until we told them! I'd definitely suggest adding in the coconut milk, because it makes them so creamy and wonderful!
My husband and I really enjoyed the salmon so I will definitely be making it again :D
Herb Crusted Salmon
2 salmon fillets
2 teaspoons coconut flour
2 teaspoons dried parsley
1 tablespoon dijon mustard
Salt and pepper, to taste
2. Place salmon fillets on a baking sheet lined with parchment paper or foil.
3. Rub the olive oil and dijon mustard into the salmon.
4. In a small bowl, mix together the coconut flour, parsley, and salt and pepper.
5. Sprinkle the toppings on the salmon and then pat the seasonings in with your hand.
