Herb Crusted Salmon & Mashed Faux-tatoes

Man was it a great dinner last night! I was in the mood to try a different seasoning for our salmon instead of my usual salt, rosemary, & lemon. I came across this combination on the PaleOMG blog and decided to serve it with some mashed garlic cauliflower and steamed broccoli. I did adjust the seasoning quantities because my salmon fillets must have been smaller than hers. It ended up being more seasoning than I needed for our 2 fillets.

The mashed cauliflower is a great substitute for potatoes, especially when trying to reduce the starches and add in more vegetables. They are really tasty in my Shepherd's Pie recipe as well and most people didn't know that it wasn't potatoes while eating it until we told them! I'd definitely suggest adding in the coconut milk, because it makes them so creamy and wonderful!

My husband and I really enjoyed the salmon so I will definitely be making it again :D

Herb Crusted Salmon

2 salmon fillets
2 teaspoons coconut flour
2 teaspoons dried parsley
1 tablespoon olive oil
1 tablespoon dijon mustard
Salt and pepper, to taste

1. Preheat oven to 450 degrees.
2. Place salmon fillets on a baking sheet lined with parchment paper or foil.
3. Rub the olive oil and dijon mustard into the salmon.
4. In a small bowl, mix together the coconut flour, parsley, and salt and pepper.
5. Sprinkle the toppings on the salmon and then pat the seasonings in with your hand.
6. Place in oven for 15-20 minutes or until salmon is cooked to your preference.

Mashed Faux-tatoes

1 head of cauliflower
3 tablespoons butter, ghee, or coconut oil
1 teaspoon salt
2 tablespoons coconut milk (optional, makes them creamier)
Garlic, to taste (optional)

1. Chop the cauliflower into florets.
2. Steam the cauliflower until tender.
3. Place the cauliflower in the food processor with the rest of the ingredients and puree until smooth and creamy.

Hey... it's Thankful Thursday! Today I am really grateful to be a mother. It certainly has many moments that are tough and not so rewarding but overall it is wonderful and I absolutely love being home to watch my son learn and grow! He's got spunk and makes my heart melt :) What are you feeling thankful for today?
