Green Eggs & Sausage + Shamrock Shake

Happy St. Patrick's Day! I hope it's been a good one & you've been able to get in plenty of greens in coordination with this fun holiday!

I feel like a new woman because I found a great deal on 2 12-inch ceramic frying pans today! I used one for my first time while visiting my cousin in Texas. I fell in love with it & have been determined to get one since coming home. What an awesome St. Patrick's day gift to myself, right? I've also only got 7 more days of my Whole30, so I thought it was a great non-food motivation (we'll ignore the fact that it's used to make food)! :D

My hubby requested a green breakfast this morning & so he got one! There is no need for food coloring when you've got spinach, kale, or other leafy greens hanging around :) The eggs turned out really green because I used quite a few handfuls of spinach, so if you wanted to put less, you'd still get a great green color. Check out my little holiday concoctions! 

Green Eggs & Sausage Hash

Ingredients
6 Eggs
1/3 lb breakfast sausage (I used ground beef with home pre-mixed spices)
1-2 cups spinach
1 tablespoon coconut oil
Salt & pepper to taste

Directions
1. Cook breakfast sausage on medium heat until lightly browned.
2. Add coconut oil to the sausage in the frying pan.
3. Blend eggs & spinach in the blender.
4. Pour egg mixture into frying pan, add salt and pepper, & stir occasionally until cooked.

"Shamrock Shake"

Ingredients
1 can full fat coconut milk (1 3/4 cup)
1 frozen banana
1-2 cups kale or 1 avocado peeled and seeded
1 teaspoon mint extract (or peppermint)
1 tablespoon pure vanilla extract 
1 1/2 cups ice (use 1 cup of ice if you use avocado to make it green)

Directions
Throw everything in the blender and blend until smooth. Enjoy!
