Crock Pot Balsamic Short Ribs

This was dinner last night... AMAZING! I made a quick little veggie stir fry with onions, red bell peppers, and kale in some red palm oil to go with the ribs. If you've never tried red palm oil, I'd highly suggest it. It's another one of those oils that is just magical when you cook with it!

It looks like a ton of meat but it's skewed with the big bones hanging out in the middle if it. Short ribs are a little bit of work to eat because they tend to be fatty but they are SOOO worth it!

These ribs are awesome because you throw them in the crock pot and after a few hours, you get a comfort food that is satisfying any time of the year! Definitely give them a try and let me know what you think!

Crock Pot Balsamic Short Ribs

Ingredients
1 1/2 tsp onion powder
1/4 tsp paprika
1/2 tsp black pepper
1 tbsp sage
1 tbsp salt
2-3 lbs beef short ribs
1 tbsp coconut oil
15 oz plain tomato sauce
1/2 cup balsamic vinegar
4 whole dried dates
4 cloves minced garlic (about 4 tsp)

Directions
1. Mix all seasonings together and rub into the short ribs
2. Melt the coconut oil in a large skillet over medium heat
3. Sear the short ribs on each side until slightly browned (about 2 minutes each side)
4. Place the ribs in a crock pot with the tomato sauce, balsamic vinegar, garlic, and dates
5. Cover and cook on low for 4-6 hours (meat should be tender enough to fall apart with a fork)
