Sweet Potato Fries

It's been way too long... but there's nothing like some sweet potato fries to go along with on of B's Primal Burgers! They are always worth making just to see the big smile and satisfaction on my sweetheart's face when he eats them. Quite honestly... I'm not sure why I haven't made them in a while. Lazy I guess :)

Sweet potato fries don't get as crispy as regular fries, especially since they aren't battered and fried 3+ times like you'd get eating out, but they are so tasty and you can do all kinds of seasoning combinations for fun (paprika, pepper, garlic, etc). They totally hold their own just fine and don't need fry sauce either! I'm kind of traditional in my fry making and stick with coconut oil and salt but mix it up if you'd like!

I like to eat a little bit of sweet potato on my workout days, so these made some great fuel for volleyball tonight!

Sweet Potato Fries

Ingredients
2 large yams, washed and dried completely
2 tablespoons of coconut oil, melted
Sea Salt

Directions
1. Preheat oven to 400 F
2. Peel the yams and cut them into even matchsticks
3. Place the fries in a single layer on a baking sheet lined with parchment paper (or foil, parchment makes them crisper)
4. Pour the melted coconut oil over the fries and move them around until well-coated
5. Add salt & other seasonings if using
6. Bake for approximately 25-30 minutes, flipping the fries over half way through
7. Enjoy!

The week is still young but have you been able to be more "present" in your daily activities so far? I've had some great laughs and fun with my son. I'm really enjoying looking for the little, beautiful things life has to offer :)
