Paleo Pancakes

Here is another great gluten-free breakfast recipe for the kids; big kids not excluded! :) I'm really making an effort to provide kid-friendly ideas for those looking for more breakfast options. Especially recipes that can be made in big batches and eaten for days!

This recipe is also great because it doesn't require and "special" ingredients like coconut flour or nut four. They can be whipped together with ingredients you'll likely already have at home!

I made the pancakes with precooked sweet potato this time. I love using sweet potatoes or bananas because then an additional sweetener doesn't need to be added to the batter. They have such a nice flavor. My 9-month old loved them & ate a bunch!

I did try some organic peanut butter and bananas on top and it was good but not life changing for me. Who knows, maybe  that combo will be your favorite! I ate the rest of them with butter and 100% pure maple syrup. My next flavor combination to try will be some fresh fruit with homemade whipped coconut cream :)

Paleo Pancakes

Ingredients 
3 Eggs
1 1/2 cups sweet potato, pumpkin, or banana
1 tsp cinnamon
1/2 tsp ginger
Pinch of nutmeg
Pinch salt

Directions
1. Mix all ingredients together until well combined (using a blender works great)
2. Heat about a tablespoon of coconut oil in a large pan on medium heat
3. Pour slightly less than 1/4 cup of batter for each pancake (should be fairly small, about 2.5" wide)
4. Flip pancakes over once well cooked on the first  side
5. Cook the rest of the pancakes, making sure to add more coconut oil for each new set

Makes approximately 10 pancakes
