This recipe is a lot of fun because we've made these waffles so many different ways. I originally made up the recipe when we wanted some gluten-free pumpkin waffles one morning. They're different almost every time with all our variations but really good! We've tried pumpkin, sweet potato, banana, and then my husband came up with the idea of trying spinach! Way to squeeze in more greens, right? I thought it was a great option for a fun St. Patrick's Day breakfast too!
We typically eat ours with some grass-fed butter and pure maple syrup. It only takes a few dribbles of syrup and they're plenty sweet. You could also put some berries on them with homemade coconut cream! I think next time we make them, we're going to try out almond butter with bananas! Give them a try and tell me what you think!
Grain-free Waffles
Ingredients
4 eggs
1/2 cup pumpkin, sweet potato, banana, or 2 cups spinach
2 tablespoons coconut flour or 1 scoop protein powder (don't do both, or they are really dry!)
Pinch of salt
1/4 teaspoon baking soda
1/4 teaspoon nutmeg
1 teaspoon cinnamon
Dash of Ginger
Dash of Cloves
1-2 tablespoons of honey, stevia, or xylitol
Directions
1. Mix all ingredients together really well except for the coconut flour. If you put spinach in the batter, mix all ingredients in the blender.
2. Add coconut flour 1 tablespoon at a time.
3. Pour 1/3 cup of batter into the waffle maker.
4. Put on desired toppings & enjoy!
Makes 4 waffles
