Homemade Beef Jerky

This is another place I have been "ruined"... I can't eat the jerky found in most stores anymore. Ours is just soooo much better :) We don't really eat soy at our house, so it's soy-free as well!

I try to keep jerky available as a quick protein option for lunches when we don't have leftovers available. It's also great for travel & an on-the-go snack as well. I hope you enjoy it too!

Beef Jerky

Ingredients
2 pounds beef round steak
2 tablespoons liquid smoke
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon Sea salt

Directions
1. Cut beef into thin strips (about 1/8 in).
2. Place the meat strips in a gallon ziplock bag.
3. Mix all other ingredients in a bowl.
4. Pour the marinade into the ziplock bag. Close the bag and mix with the meat until well covered.
5. Let marinade for at least 4 hours (I prefer to leave it overnight or 8 hrs)
6. Place the meat strips on your dehydrator sheets
7. Set the temperature to 135 & check on it in roughly 6 hours. It will typically need 8 hrs to fully dry the meat out. You can also bake it in the oven for 6-8 hours at 200 degrees.

How's the water intake going so far? It has taken a little more conscious effort for me lately but I've been packing my water bottle around with me everywhere to get it done! Has it been easier or harder than you thought it would be?
