Upcoming Weekly Challenge: Veggies

Happy Saturday! I hope you've had a great week. How did the sugar-free week challenge go? Did you learn anything about yourself and/or your relationship with sugar? I'm actually down a few pounds, my stomach is flatter, & my clothes fit better since doing both the gluten-free and sugar-free challenges. It feels great!

This week's challenge helped me realize that I had been indulging in more sweets recently than I thought. I love having challenges like this to help me get back on track. I feel great and it helps motivate me to make more optimal choices in the future. Neither sugar or gluten are needed for a healthy, thriving life, so the more you limit them in your diet & replace them with better options, the better off you'll be!


Don't worry, these challenges aren't always about taking something out of your diet and they won't always be food related. But now that you're honing in better to how sugar affects you, I want to take this upcoming week to focus on abundance, specifically, an abundance of veggies!

Challenge
The challenge is to get in a minimum of 4, 1-cup servings of vegetables every day. Here's a list of (but certainly not limited to) a bunch of veggies you could play with this week:

- Leafy greens (kale, spinach, lettuce, collard greens, arugula, swiss chard)
- Cabbage
- Broccoli
- Cauliflower
- Celery
- Asparagus
- Carrots
- Brussels Sprouts
- Artichoke
- Squash
- Zucchini

Try different cooking methods too - steaming, boiling, broiling, grilling, mashing or enjoy the ones that you can raw! As always, I'll post some recipes throughout the upcoming week with fun ways of getting more veggies into your meals!
