German Pancakes

I was in one of those moods again to have something different for breakfast. Call it pregnancy cravings but I wanted some "pop-up eggs" that I remember having at home growing up.

It wasn't until a few years ago that I learned that most people call them German Pancakes or Dutch Babies. Anyway... whatever you choose to call them, I hope you enjoy this recipe. I added a few spices and coconut oil for mine. If you don't get through the whole pan in one sitting, they heat up really well later too!


German Pancakes

Ingredient
1/3 cup coconut oil or butter
8 eggs
1 cup coconut or almond milk
1/3 cup arrowroot powder
1/4 cup coconut flour
1 tsp pure vanilla extract
1 tsp cinnamon
1/2 tsp salt

Directions
1. Preheat oven to 425.
2. Melt coconut oil/butter and pour into a 9×13 pan.
3. Put eggs in blender and blend on high for 15 seconds.
4. Add the rest of the ingredients and blend for 30 seconds.
5. Pour batter into the pan containing the melted oil/butter.
6. Bake for 20 minutes. 
7. Cut and serve with maple syrup and/or fresh fruit with coconut milk whipped cream.
